  • tbsp. walnuts chopped
  • 8 oz. spinach leaves
  • 1 avocado (peeled, pitted and sliced)
  • 1 lemon juiced
  1. Over medium-high, toast the walnuts for 3-4 minutes, shifting the pan often so the
  2. walnuts do not burn. Let cool for 15 minutes.
  3. Toss the spinach, walnuts and avocado in a bowl and drizzle the lemon juice over the
  4. top.
  5. Salt and pepper to taste.
  6. Serve and Enjoy!
