Walnut and Artichoke Salad

- 1½ tbsp. walnuts chopped
- 8 oz. spinach leaves
- 1 avocado (peeled, pitted and sliced)
- 1 lemon juiced
- Over medium-high, toast the walnuts for 3-4 minutes, shifting the pan often so the
- walnuts do not burn. Let cool for 15 minutes.
- Toss the spinach, walnuts and avocado in a bowl and drizzle the lemon juice over the
