Salmon and Zucchini Fritters

Zucchini fritters are a great way to get some extra vegetables into your diet. Just a touch of salt and pepper, and a little dill is all you need to make the perfect zucchini fritters. Ingredients
  • 2 eggs
  • ½ cup almond meal
  • 100 g smoked salmon (thinly sliced)
  • 2 large zucchini (roughly grated, liquid squeezed out)
  • 1 tbsp chopped dill 
  • salt and pepper
  • olive oil
Instructions
  1. Combine eggs and almond meal in a bowl and whisk until smooth

  2. Stir in the smoked salmon, zucchini, dill, salt and pepper. 

  3. Place oil in a frying pan and heat over medium heat. 

  4. Scoop 1 tablespoonful of the smoked salmon mixture into the pan, allowing room for spreading

  5. Fry for 2-3 minutes each side until golden and cooked through. 

  6. Drain the fritter on absorbent paper.

  7. Repeat with remaining smoked salmon mixture, adding oil to the pan between each batch as required. 

  8. Serve with a simple green salad.
