Pork Fried Cauliflower Rice

Not being able to enjoy take-out can be one of the hardest parts of getting our diet in check. Thankfully, with some simple substitutions, creating delicious take-out from home couldn't be easier. Cauliflower rice is the perfect replacement for starchy and stodgy white rice. Bringing the best of both worlds, cauliflower rice is healthy, gives you loads of energy throughout the day, and tastes just as good as the real thing. It’s easy to make with meat and vegetables you probably already have at home. And, depending on your taste, cauliflower rice doesn't take more than a few minutes to whip up. So, the next time you get a take-out craving, reach for your cauliflower rice instead. Try this Dr Spages recipe for dinner with the family, or for a healthy lunch on your break.

Ingredients
  • 1 tbsp olive oil
  • 1 head cauliflower (chopped and blended in the food processor to a rice like consistency)
  • 1 cup pork (cooked and chopped)
  • 2 carrots (peeled and diced)
  • 1/2 onion (chopped)
  • 2 cloves garlic (minced)
  • 1/4 cup coconut aminos (soy sauce equivalent)
  • 2 eggs
  • Salt and pepper
Instructions
  1. When you have all of the above ingredient prepared, heat the olive oil in a pan over medium heat and add the onions, carrots and garlic and cook until they start to become soft

  2. Add the blended cauliower and cook thoroughly

  3. Next add the pork and coconut aminos and continue to sauté

  4. In a bowl crack the eggs and whisk, then add to the pan and stir for a few minutes until they are cooked

  5. Season with salt and pepper to taste
